Gärdsholmen's archipelago pantry
and freeze-drying

About the project

Anne Bünder and Jacob Lundgren live year-round on the island of Gärdsholmen in Västervik municipality. They run the company Gärdsholmen's Archipelago Homestead, which rents out vacation homes and grows vegetables, fruit, and berries. Living on an island presents challenges with storage, sustainability, and transportation. From this, the idea was born to refine and freeze-dry the farm's production for further sale to all outdoor life enthusiasts visiting the area.

Project goals

By converting one of the farm's outbuildings into a preparation facility and farm shop, as well as furnishing and equipping these for food preparation and freeze-drying, they intend to develop a range of new products that will diversify and strengthen the company.
